Bacon Wrapped & Stuffed Meatloaf

Making a bacon basket is easy. It can be used for anything not just meatloaf. I use it for chicken, pork, beef, taco shells and wrapping veggies. 

I will include a YouTube Video link at the bottom of this post and a separate blog post just for bacon weaving so you will have a visual guide on how to make a bacon basket if you are a visual person like me. 

So make your bacon basket, but have it laid out on a cutting board with either cling wrap or wax paper under it. This makes for an even and easy roll up later. Using thin sliced bacon that has some stretch to it works better than thick slices. 



For this recipe your choice of burger and this also works with soy or ground portabella mushrooms. (finely chopped soy curd or portabella mushrooms)


Ingredients: anything in parenthesizes is (optional alternative)

8 Thin Strips of Bacon (Vacon for vegetarians or zucchini strips)
1 lbs. Burger (chopped mushrooms or soy curd)
1 Large or XL Egg (eggs for vegans)
1 Cup Bread Crumbs
1 Tsp Salt
2 Tsp Ground Black Pepper
1/4 Cup Worcestershire Sauce
1/4 Tsp Thyme
1 Tbsp. Minced Garlic
1/2 Cup Chopped Mushrooms (optional)
1/8 Cup Chopped Sweet Onion (onion flakes)
2 Cups Mashed Potatoes (if instant use beef or veggie broth instead of water)
1/2 Cup Parmesan Cheese
1 Cup Milk (Vegan Milk)
2 Tbsp. Margarine or Butter
1/4 Cup Softened Cream Cheese (vegetable cream cheese)
1 Cup Shredded Cheese Mozzarella or Cheddar (vegan cheese)
BBQ Sauce or Mushroom Gravy (optional)

Directions:

Weave your bacon basket and set aside on flat surface on top of cling wrap or parchment paper. Keeping your strips very close together.

In a Large bowl add your burger making a hole or well in the center. Add into well your egg, minced onion, garlic, thyme, Parmesan cheese, Worcestershire Sauce, 1 Tsp Ground Black Pepper,  and breadcrumbs. Mix by hand well until all ingredients are thoroughly combined.

Make your 2 cups of mashed potatoes. If instant potatoes use vegetable broth or beef broth instead of water. Add milk, butter and your softened cream cheese and mix until melted into potatoes smoothly no clumps or lumps, add salt and 1 tsp. ground black pepper. *Note* Using an electric mixer helps make it smooth*

Preheat oven to 350 degrees F (175 degrees C)

Place your meat mixture on top of cling wrap or parchment paper, roll out to 1" thick 9" round like a pie crust. On top of burger bed layer evenly chopped mushrooms( if using them). Next spread mashed potatoes evenly about 1/2 inch thick leaving about an inch circumference around the outside of your burger bed still showing. Layer your shredded cheese on top. slowly roll your loaf using the cling wrap or parchment paper to lift and roll evenly like a strudel or jelly roll.

When done push your ends together and shape if needed into a loaf shape of your pan gently. Place your loaf upside-down on your bacon weave. Gently roll your top and bottom of bacon weave to top center. Tucking all ends together on ends and top gently into loaf. If there are gaps its OK this will be the bottom.

Gently wrap your cling wrap or parchment paper around loaf. Flip over and make any adjustments to the strips. Lift and place into your meatloaf pan. *Note* I use a double bottom non stick pan for additional oil and grease to collect in, so additional grease is not staying in my loaf.* 

*Additional Tips*  Place oven on broil last 5 minutes if bacon isn't crispy. You can also add BBQ sauce or mushroom gravy on top last 5 min of cooking once bacon is crispy. Use any extra gravy from glazing top of loaf to individually garnish each slice on the plate for an amazing presentation*

Bake 50-60 Minutes

Remove from Oven and let stand 5 minutes. Cut, Serve, & Enjoy!

This dish goes great with a side of green beans,, Zucchini, or any Veggies.
