Chrissy's Super Easy Totally AMAZING Brussel Sprouts with Bacon and Balsamic Vinegar
I am not sure about you but I know a lot of people that do NOT like "Brussel Sprouts" my husband is one of them. He gags just thinking about eating them, Oh but he sure ate almost the whole pan of these by himself and now asks me to make them often! I make them in a way that has so much flavor and taste you would swear they are NOT Brussels!
Brussel Sprouts have a strong taste all by themselves, just boiling them or covering them with cheese does not always make them very tasty to someone who does not like them. So you need to cook them in a way that infuses them with delectable flavors.
4 cups brussel sprouts (halved)
4-6 strips of bacon or panchetta chopped
1/2 teaspoon nutmeg
1 teaspoon minced garlic
1/4 cup chopped onion
1 teaspoon black or white ground pepper
1 tablespoon olive oil
3 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 tablespoon soy sauce
1/2 cup vegetable stock (or water)
Take the halved brussel sprouts and put them flat side down in a skillet medium to high heat. (I prefer an iron skillet) Drizzle the olive oil over the brussels, and add the chopped bacon or panchetta. Cook 5-7 minutes, then using tongs start flipping and moving the brussels around the pan as they blacken.
Make sure to char each one a little. At this point I start working the bacon or panchetta to the bottom of the pan to get nice and crispy. Once all of the brussels are charred, (In measuring cup whisk together balsamic vinegar, soy sauce, brown sugar) next add the remaining ingredients except for the stock or water. Turn down the heat to medium heat constantly stirring cook roughly 3 minutes, then add stock or water and cover until fork tender. Add more stock if needed.
If you choose to bake these you can do that too!
Preheat oven to 425 degrees F
Do not use any stock or water this way. In a skillet blacken your brussels with the bacon or panchetta, & onions. Then place them flat side down on a baking, or cookie sheet. Bake 12 minutes
Take the remaining ingredients while your brussels are in the oven and put them in a sauce pan. Bring the contents to a hard boil and remove from heat. When you pull your brussels out of the oven place in a large bowl and pour your liquid over top.
Garnish with toasted almonds or pine nuts. :)
