Chrissy's Cheesy Creamy Tomato Bisque Soup
This is one of my fall favorites, Serve it with a three cheese grilled cheese all melty golden brown and buttery! Yumm! Once I finish this soup I normally put it in my crock pot on warm until ready to serve, also this is great for Halloween parties, and pot lucks or any gathering. Its beautiful orange color just says welcome to autumn.
4 Teaspoons unsalted butter
4 slices of bacon minced
1 Spanish onion finely chopped
1 carrot diced
1 stock of celery chopped
2 Tablespoons of minced garlic
8 Tablespoons all purpose flour
5 cups of beef stock
1 cup tomato puree
1/4 cup softened cream cheese
1 28 oz can of diced or chopped tomatoes
1 cup heavy cream
3 teaspoons of chopped fresh parsley (ok to use dried if desire)
Sprig of fresh thyme (ok to use 2 teaspoons dried)
1 bay leaf
1 1/2 teaspoon kosher salt
2 Tablespoons ground black pepper
Melt butter on medium low heat in a large soup pot or stock pot. Add the bacon and cook until crisp and fat has been rendered off roughly about a minute and a half. remove bacon and place on a paper-towel lined plate, set aside.
Add to the pot the garlic, celery, carrots, and onion. Cover the pot and cook for roughly 7-8 minutes until they smell fragrant.
Stir in the flour and continuously stir while cooking for about 3 minutes. Stir in the broth and tomato puree, and diced tomatoes. Bring to a boil and whisk constantly. Add parsley, thyme, and bay leaf. Turn the heat down to low and simmer 30 minutes. Add cream cheese and whisk another 3 minutes.
*Note* If using a blender let soup cool and then remove bay leaf and puree. If using an emulsion blender remove bay leaf and immediately blend until smooth.
Using a sieve over a large bowl pour the blended mixture and remove any chunks.
Pour the sieved smooth mixture back into the soup pan or stock pot on medium heat and stir for about 4 minutes to reheat, slowly whisk in the heavy cream, salt and pepper. Once soup starts bubbling remove from heat (Do not bring to boil remove it just as it starts to bubble right before the boil)
At this point you can serve it if your ready to serve, if your taking it to a gathering place it in your crock pot on low or warm.
When serving a good garnish is your cooked bacon and/or a dallop of sour cream.
I always make some 3 cheese grilled cheese sandwiches using provolone, Swiss, and cheddar cheese, use good bread and butter outside of bread. Grill in skillet or on griddle until golden brown and delicious! These are a perfect pair and scream happy autumn!
