Under 3 Minute Microwave Mint Chocolate Chip Fudge


For those of you that love mint chocolate chip ice cream your going to love this! 

I love the simplicity of this recipe, however, don't let the simplicity fool ya! It does not lack in flavor or rich creaminess!  This recipe is perfect for any occasion, and the colors brighten up any table. People will think you slaved over this fudge... but that's OK it can be our little secret! 

Ingredients:

3 1/2 cups white or mint chocolate chips
2 tablespoons of unsalted butter
1 can (14 oz.) sweetened condensed milk
2 1/2 teaspoons of mint extract 
Green food coloring (if using white chocolate chips)
3/4 cups mini chocolate chips


Directions:

Spray lightly non stick cooking spray into an 8x8 baking pan.

In a microwave safe bowl cook in microwave the white or mint chips with butter 1 minute. Let rest 1 minute. Microwave again another 30- 45 seconds until all chips are melted and there are no lumps. 

Stir in the sweetened condensed milk, extract, and add green food coloring to desired greenness if you are using white chocolate chips. 

Let rest 2 minutes. Then fold in 3/4 cup of mini chocolate chips.

Press fudge into prepared pan using a rubber spatula. 

Sprinkle the remaining mini chocolate chips on top and gently press into the fudge mixture to adhere to the top. 

Place in your refrigerator for 2 hours to set and chill. 

After 2 hours cut into cubes or squares, and you can store these in an airtight container for up to 2 months.  


I do not recommend using peppermint extract since it throws off the flavor. I use "Mint".

    1. Thank you! I also do a version with oreo cookies that is so yummy! Cookies and cream! Just use crumbled Oreo cookies instead of peppermint.
