3 Minute Microwave Peppermint Fudge!

What speaks holiday flavors more than peppermint? With this recipe you can use peppermint candies or candy canes of your choice flavor. Actually this recipe can be made the same way just add your own personal flavor, if not peppermint, Oreo cookies works amazing too! The options are endless! 


Ingredients:

3 1/2 cups white or mint chocolate chips
2 tablespoons of unsalted butter
1 can (14 oz.) sweetened condensed milk
2 1/2 teaspoons of peppermint extract 
1 cup peppermint candies blended in a blender to a sandy gravel like consistency.


Directions:

Spray lightly non stick cooking spray into an 8x8 baking pan.

In a microwave safe bowl cook in microwave the white chocolate chips with the butter 1 minute. Let rest 1 minute. Microwave again another 30- 45 seconds until all chips are melted and there are no lumps. 

Stir in the sweetened condensed milk, peppermint extract.

Let rest 2 minutes. Then fold in 3/4 cup of blended peppermint candies. 

Press fudge into prepared pan using a rubber spatula. 

Sprinkle the remaining peppermint candies on top and gently press into the fudge mixture to adhere to the top. 

Place in your refrigerator for 2 hours to set and chill. 

After 2 hours cut into cubes or squares, and you can store these in an airtight container for up to 2 months.
