Chrissy's Iron Skillet Apple Pie! Plus Mini Pies!


If you have an iron skillet the options are endless. A true seasoned iron skillet is the best pie pan, if you don't have a cast iron pie plate. So here is a classic recipe with a twist.

Ingredients: Crust

1 1/2 cups flour
2/3 cup shortening or butter
1/4 teaspoon salt
1/4 teaspoon sugar

1/2 cups additional flour
1/2 cup super cold water ( I use a bowl of ice and set my water in a metal or glass measuring cup inside) 

in measuring cup whisk 1 egg and 1/4 cup cream or milk for egg wash

Directions: Crust

With a pastry cutter cut first 4 ingredients together until fine and crumbly.

in separate bowl make paste with 1/2 cup flour & water mixture. Mix in the crumbly mixture to the paste mixture until a dough forms. cut in half to make two crusts one for top one for bottom.

on a lightly floured flat surface with a floured rolling pin roll from inside to outside, working around from side to side making a 9- 10 inch circle. Place inside your lightly greased and floured pie plate. 


Ingredients: Filling

2 granny smith apples cored and finely sliced
2 red sweet apples cored and finely sliced
2 fuji apples cored and finely sliced
3 tablespoons all purpose flour
1 teaspoon corn starch
1/2 unsalted butter
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
dash of nutmeg
dash of ground cloves
1/2 sugar
1/2 packed brown sugar
1/2 lemon squeezed (juice)
1/4 cup jim beam apple (Can use water as option)

Directions:

Preheat oven to 425 Degrees F (220 degrees C) 
Melt butter in saucepan Med- High Heat. Stir in flour to form a paste, add Jim Beam Apple, White sugar and bring to a boil. Reduce temperature and simmer 2 minutes. Add remaining ingredients and simmer 5 minutes stirring often.

Place the bottom crust in your iron skillet. fill with apples, gently pour your liquid from skillet over the apples. Cover with your top crust, with either whole crust with slits to allow air to escape or lattice work or decorative cut outs crust. Brush top of crust with egg wash and bake 10 minutes. Then reduce heat to 350 degrees F (175 degrees C) and continue baking 35-45 minutes until apples are soft. If crust looks like it is starting to burn or get too brown cover with a sheet of aluminum foil. 

Let set for 10 minutes! Then Serve!

Serves well with a scoop of vanilla ice cream. Yummmmm!!! 

You can also divide the contents into smaller individual baking dishes and make 4 mini apple pies. Company loves this so they each get their own special serving! Great for kids, dinner parties, or special guests.
