Chrissy's Roasted & Seasoned Pumpkin Seeds~ Flavors of Ranch, Chipotle, Garlic Parmesan, & Lemon Papper

With all these left over pumpkins from Halloween grocery stores are pushing rock bottom prices to get rid of there leftover pumpkins. So besides making those amazing pumpkin pies, lets make some tasty, healthy snacks too! 

First cut the tops off your pumpkins and scrape out the seeds from inside with a large spoon. Set your pumpkin aside for that delicious pie! 

Place the seeds in a colander, and rinse of as much pumpkin from the seeds as you can. 

Next place the seeds in a large pot of water with 4 tablespoons of salt and boil for 10 minutes. 

Pour back into the colander, and rinse off any remaining pumpkin. In same stock pot for second time add 2 cups of water and 1 teaspoon of salt for every 1 cup of pumpkin seeds you add to the pot. boil 7-10 minutes. Shut water off and let stand 5 minutes. 

Pour content back into the colander and do not rinse. 

Using a one cup measuring cup put them on baking sheet in a single layer not over lapping. Next spray with butter flavored cooking spar or drizzle a little olive oil over them. Next add the seasoning of your choice. 
  •  Ranch dressing dry packet
  • Garlic Salt and Parmesan cheese
  • Chipotle seasoning
  • Lemon Pepper
  • Taco Seasoning
  • Salt and spray a light mist with a water bottle of apple cider vinegar
  • Rosemary infused olive oil
  • French Onion Soup Mix dry
  • Salt and pepper Etc.

Bake at 375 degrees F on top rack for about 15- 20 minutes. checking frequently as not to burn them towards the end. You should know they are done when all the moisture should be out of them and they should have a toasted flavorful outside shell. Sometimes you will hear one pop like pop corn that is a pretty good sign they are done. 

Lastly I scoop them into small zip-lock bags and label them with the flavor. 

These heart healthy and yummy snacks are a great treat!
