Chrissy's Autumn Italian Cheese Stuffed Brandy Pears * Light Dessert


This Dessert is so simple to make and so light, but oh so delicious! You honestly feel like you are eating something sinful! It is super easy to make yet satisfies the sweet tooth with out breaking the calorie bank. Make it for a family dinner or a dinner party as everyone that partakes of these will be impressed by your choice of dessert. This is one of my favorite easy desserts to make since it is healthy and simple. Yet looks so elegant! 


Ingredients

(Filling will roughly fill 10 pear halves)

1 pear per person for servings. (I use Bartlett) 
1   2 lb (32 oz) container of Ricotta Cheese (pic at bottom) 
1   Lg egg
1/2 Cup brown sugar
1/2 Cup white sugar
1    Cup powdered sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon allspice
1/4 teaspoon ginger
1/8 teaspoon cloves (optional)
1/2 Cup Brandy
1/2 stick of unsalted butter (4 Tblspoons or 1/4 cup)


Directions

Make a simple syrup In a medium saucepan on the stove low - medium heat add your Butter, Brandy, white sugar, brown sugar. Stir continuously until sugar and butter is melted. Turn heat up to Medium bring to a slight boil and turn off. Let cool 20 min.

Preheat oven to 300 degrees. 

Cut Pears in half. Core center of pear with seeds out using a coring tool or a grapefruit spoon. 

In a medium sized bowl using a hand mixer on low, mix your Ricotta cheese, egg, spices and your powdered sugar until smooth and well incorporated. 

Add 3/4 of your cooled syrup from the stove-top to your cheese mix in your bowl. Leave enough wet syrup to drizzle over the top of each one when you pull them out of the oven. 

Mix all ingredients in your bowl on low with an electric hand mixer until smooth. 

Spoon filling into the cored pear halves. 

Sprinkle lightly with cinnamon. 

Bake in oven until pears are fork soft. Roughly 20-30 minutes. 

Warm up your syrup right before you pull your pears out of the oven. 

Drizzle your remaining syrup over top your baked pears, let stand 5 minutes and serve warm. 

These are amazing with a small spoon of vanilla ice cream on the side.
