Chrissy's Fluffy Buttermilk Pancakes in 15 Minutes! With Bonus Ricotta Pancakes Recipe Too!


Looking for those small cafe style light and fluffy pancakes? How about making them right at home? These buttermilk pancakes are small diner perfection and so easy to make! These picture perfect pancakes are so light and fluffy but ohhh soooo delicious and in roughly 15 minutes or less total! 

This makes roughly 16 pancakes depending on size. 

Ingredients: 

5 Large eggs
2 Cups 2% milk or evaporated canned milk
5 Cups of buttermilk
1/2 cup melted butter 
(I melt my butter in the microwave for 45 seconds in glass measuring cup)
5 Cups All-purpose flour
6 teaspoons of baking powder
6 teaspoons of baking soda (one major component to fluffiness) 👀
7 Tablespoons sugar
4 teaspoons of Carbonated water (Optional)


Directions:


First start by whisking together in a large mixing bowl your wet ingredients, eggs, milk, buttermilk, & seltzer water. 

Make sure your melted butter is cooled or luke warm so it does not start to cook your eggs in your batter when you add it. 

Next slowly add your dry ingredients: sugar, baking powder and soda. Add your flour in 2 or 3 increments last so you can judge the thickness of your batter. If your batter is too thick add buttermilk, if it is too loose add flour. Mix all ingredients until it is the consistency you like. I prefer mine runny but not watery, it runs freely and has just enough thickness to it that it is not quite dough. A little thinner than a cake batter. 

Heat a large griddle or skillet over medium heat, and spray with non-stick cooking spray. I always put a tablespoon of batter in the pan to check the temperature so I can adjust it up or down. I experiment with a tablespoon of batter first. 

Depending on the size of pancakes you desire use 1/4 cup, or 1/2 cup to scoop and pour your batter onto the skillet. 

Once you pour the pancakes watch the batter, bubbles with start to form at pop. This is what you want because this is the air making your pancakes light and fluffy! 

When the bubbles slow down and almost stop forming at the top, with a spatula flip your pancakes. Cook until evenly cooked brown on the other side. 

Continue this until your batter is all used. 

Top these with anything you desire, fresh fruit, syrup, butter, peanut butter, jelly, hazelnut chocolate spread, Etc. 

** Chrissy's Recipe Notes ** I have even made these very large and put scrambled eggs, hash-browns, cheese, and bacon inside of them and wrapped them like a breakfast burrito and topped it with sausage gravy. They were a hit! Yumm! 

** BONUS RECIPE ** 

Also I have an amazing Ricotta Cheese Fluffy Pancake recipe if you want to try a Custard style inside they are soo amazing! 

1 cup Ricotta cheese
1/4 cup melted butter
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
6 Tablespoons sugar
3/4 Cups milk
2 Large eggs
1 teaspoon vanilla extract

In a large bowl mix your wet ingredients, then slowly fold in your dry ingredients. This batter will be a little thicker than a buttermilk batter.

For extremely fluffy batter remove the egg yolks and whisk your egg whites until fluffy and frothy. Then fold them into your batter a few spoon fulls at a time. 


Heat a large griddle or skillet over medium heat, and spray with non-stick cooking spray. I always put a tablespoon of batter in the pan to check the temperature so I can adjust it up or down. I experiment with a tablespoon of batter first. 

Depending on the size of pancakes you desire use 1/4 cup, or 1/2 cup to scoop and pour your batter onto the skillet. 

Once you pour the pancakes watch the batter, bubbles with start to form at pop. Gently check for golden brownness by gently lifting a corner of the pancakes to cook to desired brownness. Roughly 2-3 minutes each side.  Cook until evenly cooked brown on the other side. 

Continue this until your batter is all used. 


Top these with anything you desire, fresh fruit, powered sugar, syrup, butter, peanut butter, jelly, hazelnut chocolate spread, flavored yogurt, Etc.
