Chrissy's Easy Magical Bacon Jam



If you have had this you know how amazing this stuff is. If you haven't you are probably thinking not sure that sounds good.... well let me tell you.. this is the best of all worlds with it's very mild spice, salty & the sweet! 

It is amazing to use to top a burger or add some brie or cream cheese & stuff steaks or chicken on the BBQ, use it as a spread on beagles, toast or mix it with cream cheese to make an amazing dip! 

Just recently I used it on top of a brick oven pizza~ we made at my house.  Yep! I just simply put some BBQ sauce, boneless BBQ chicken on top of the pizza and added some bacon jam and cheese.  Oh my goodness there are no words to describe how amazing this was! 

Don't knock it until you try it! It is one of those foods that once you have had it you crave it and it is Highly Addictive! 


Roughly makes 4 cups

Ingredients:

2 lbs of bacon cut into small pieces (1/2 to 1")
3 sweet yellow onion minced or pureed
2 tablespoons of minced garlic
2 tablespoons of unsalted butter
1 cup brown sugar
1/2 cup maple syrup (any flavor syrup will work)
3/8 cup Apple Cider vinegar
1 jalapeno finely diced 
1 teaspoon chili powder
1/2 teaspoon ground black pepper



Directions:


Cook bacon either in a skillet on medium heat until crispy or in the oven on a baking sheet at 350 degrees until crispy. 

Remove 2 tablespoons of the bacon grease and reserve. Then place on a paper towel lines plate. pat grease off. 

Add grease back to your pan add your butter, your onion, and diced jalapeno cook until caramelized roughly 12- 15 minutes on medium heat. 

Add garlic, brown sugar, syrup, vinegar, chili powder & black pepper. Bring to a boil, turn the heat down to low and simmer. Cook 11 minutes so the ingredients can come together and thicken.

Let cool 10 minutes, then transfer to a mason jar and set in your fridge and enjoy!
