BBQ Garlic Ranch Red Potatoes
Since It is Labor Day I figured I would share one of my favorite BBQ side dishes. Super easy and extremely yummy! You can also make these in the oven, I just like them better on the grill. Perfect for any back yard BBQ or camping trip.
8 medium red potatoes cubed (large chunks)
3 teaspoons melted butter or margarine
2 teaspoons minced garlic
1 tablespoon dried or minced parsley
1/4 teaspoon rosemary
1 teaspoon salt
3 teaspoons ranch dressing
1 1/2 tablespoons Parmesan cheese
1/2 teaspoon black pepper
Cube potatoes in large chunks and place in a large mixing bowl. Add remaining ingredients to bowl and mix with a large spoon. make sure everything is incorporated well.
Taking a large piece of aluminum foil place it flat down on a table or counter. (make sure the shiny silver side is facing out and the dull silver side in inside.)

(If making these in the oven bake at 350 degrees for 30 minutes.)
Once your pocket is made, pour in your potatoes into the pocket and seal the last end. Place on top rack or away from direct flame of your BBQ grill and cook for about 20-30 min. bag will puff up from the steam inside this is a good sign, it means your potatoes are cooking and you have a good seal on your pocket.
Once done pull the pocket off the grill and let rest for 5 min. open the pocket carefully not to get steam burned by cutting down the center with a knife. Plate and serve!
