Chrissy's Football Appetizers Cauliflower Fritter Dippers & Easy Sriracha Mayo Dip.

Thanks for stopping by and checking out my Cauliflower Fritters. These are not your traditional cooked and flattened style fritters that look like little flat cakes, I like to leave my cauliflower in whole pieces.

I love to use these as an appetizer for Football season, with a little sriracha mayo on the side. (recipe included)

Another way I like to make these are on little corn tortilla's with a little chopped tomato's, cilantro, and some sriracha mayo squirted on by a squeeze bottle. YUMM!!

Cauliflower Fritters In Beer Batter

1 head of cauliflower

1 1/2 tablespoon corn starch
1 cup of water

2 cups of all purpose flour
1/2 teaspoon baking powder
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 teaspoon ground black pepper
1/4 teaspoon cumin

1 egg whisked smooth
1 tablespoon hot-sauce (optional)
1 regular sized bottle of your favorite beer
3-4 cups of Vegetable oil in large sauce pan for frying. (these can also be baked in the oven on a non-stick baking mat or cooking sheet at 375 degrees F for 15-20 minutes until golden brown.)

Wash, clean the cauliflower by removing all the leaves and cutting them away from the stalk into finger food sized pieces. In a large pot fulled half way with water on high heat bring water to a hard boil. Using tongs or a large cooking spoon drop the cauliflower a few at a time into the water and par-boil them for 2 minutes.

Remove from water and drain and dry completely.

Put your corn starch and water in a mixing bowl and whisk together. This will look like milk. This is called a white wash. Drop your cauliflower in this mixture and move all cauliflower around in the bowl till all of it has been exposed. Let rest while you make your batter.  The white wash step helps adhere your batter to your cauliflower.

Next in large mixing bowl or container add together your dry ingredients first flour, seasoning salt, baking powder, garlic powder, cumin, black pepper. Whisk to mix all ingredients together.

Lastly add your 1 egg, beer, and hot sauce. Whisk until there are no lumps and all is mixed well together.

Give one more couple stirs of your cauliflower in the white wash and with tongs pick them up and tap them gently on the edge of the bowl to remove any excess.

Drop them into your bowl of batter until they are all in the bowl together. Now with a large spoon mix the cauliflower around in the batter folding them over and over to coat all of pieces.

In your pan of vegetable oil heat to med-high heat once is heated drop cauliflower one by one into hot oil. Cook until they are golden brown. Remove with tongs or a deep frying mesh spoon and place on a plate covered with a couple paper towels to absorb any additional oil.

let these rest while you make your Sriracha Mayo Dip or enjoy them just like they are.
