Chrissy's Cowboy Casserole And Cheesy Cowboy Drop Biscuits

End of summer is approaching and fall is near. Time to start making those amazing casseroles. Get creative and serve something different, the savory flavors will warm the soul and are considered a comfort food. Give this self created Shepard's Pie Influenced dish a try!! Come join me in my kitchen for this recipe. This recipe is a mix of ingredients that your going to love baked together.  


2 yellow squash
2 zucchini
1 cup chopped mushrooms
3 cups green beans or 2 regular sized cans of baked beans
4 slices chopped bacon
4 cups shredded Monterrey jack cheese 
6 cups Bisquick
2 1/2 cups water
1 lbs ground beef
1 lbs beef cubes
3 cups instant mashed potatoes
1 cup beef broth
1/2 stick of unsalted butter
1 cup milk or 1 can evaporated milk (if instant potatoes are dry add even parts water)
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon minced garlic
1 tablespoon Dry Ranch Dressing 
1 teaspoon parsley
1/2 cup sour cream


Start by making casserole. We will make the cowboy biscuits while the casserole is cooling and resting. 

Start with a 9 x 13 baking pan 
slice ends and stems off then slice zucchini and yellow squash into 1/2 inch slices and cover bottom of pan, chop and add mushrooms. 

Next cook your ground beef drain fat off and evenly spread on top of your squash zucchini.
Then in same pan brown and fully cook your beef cubes with salt pepper and dry ranch dressing. 

Spread over dish. 

Next cook your bacon in skillet over medium heat and when crispy chop and add green beans cook an additional 5 minutes. Pour and spread the next layer over dish. 

Next bring beef broth, butter, milk, and parsley to a boil then add instant mashed potatoes and sour cream. Fold in until moist and smooth. If dry add water, if too thin add a tablespoon of instant mashed potatoes at a time and fold in until firm.

Add 2 cups of cheese over your dish as another layer, then make your instant mashed potatoes and spread the mashed potatoes over top of casserole. 

Garnish or sprinkle with black pepper over top and bake at 350 degrees for 45 min. remove set aside to set and cool. 

Remove from oven and turn up the temp on your oven to 425 degrees 

Lastly follow the directions on the back of the Bisquick box for biscuits just add your last 2 cup of shredded cheese, water and a teaspoon of garlic. Or feel free to make corn bread and substitute the biscuits. :) 

Drop biscuits on a non stick sprayed baking sheet and bake according to directions on box. 

When biscuits are done, crumble or cut in half on a plate and spoon the casserole over top, I normally sprinkle cheese over top and serve. 

It is absolutely Yummy!
