Chrissy's Easy Shepherd's Pie in Less than 50 Minutes!

Make this meal in under 50 Minutes! 

This dish is always a hit when I serve it. Easy on the budget, and on the cook making it, yet it does not lack on flavor and taste. You can even make this meal vegetarian style! 


1 1/2 lbs ground beef (Ground turkey optional) 
2 cups finely chopped mushrooms (optional)
1 pre-made pie crust *Do Not Use Gram-cracker ones*(pic shown in directions) 
1 envelope (pkg) of brown gravy mix or regular soup sized beef gravy in a can
1 cup of water
1/2 teaspoon black pepper
2 teaspoons minced garlic
1/2 teaspoon thyme
1/2 cup cream cheese cubed (1/2 of 8 oz pkg)
4 cups instant mashed potatoes
4 cups frozen or canned vegetables (IE:mushrooms, green beans, peas, carrots, corn, broccoli, cauliflower, zucchini or a combination of them)
2 cans evaporated milk or 2 3/4 cup regular milk 
3 cups shredded cheese divided (I prefer Cheddar, Taco blend or Monterrey jack) 


Pre heat oven to 375 Degrees F

In large skillet brown your ground beef, black pepper and 1/2 of your minced garlic. 

*Note*  To make the meat more flavorful or to substitute the ground beef I recommend ground or finely chopped (Baby bells or Portobello) mushrooms as a substitute, however any mushroom chopped up and added or substituted will work. Brown the mushrooms with your ground beef or in a tablespoon of olive oil until fully cooked.**

Add your brown gravy package or canned gravy, thyme, and water to your meat mixture. Simmer 5 minutes. 

Spray 9" square or oval baking dish with non stick cooking spray. 

place your pie crust on parchment paper and roll from center to outside edges using a floured rolling pin. You are trying to make it more square and thinner to fit in your baking dish. 

Lift parchment paper or wax paper up and over to your baking dish then flip over placing your pie crust in the bottom of your baking dish. With fingers gently working from the center to the outside the pie crust to sides and corners. Cut any excess off with a butter knife from around the top edge. 

Add your vegetables to your meat mixture. You can also mix together or choose to layer veggies on top depending on how you prefer it. 

Next pour your meat then veggie mixture into your pie crust lined baking dish. 

Top with 1 1/2 cups (1/2) of your shredded cheese mixture. 

In a medium sized mixing bowl add 4 cups of instant mashed potatoes and slowly add the milk until potatoes are a firm but moist consistency.  Then add the cream cheese cubed and softened, and remaining shredded cheese and garlic. Mix until combined.  

Either spoon or using a piping bag and tip cover your whole top of your dish with your mashed potato mixture. Garnish with a sprinkle of black pepper and Bake for 35 Minutes. Feel Free to broil for 3 1/2 minutes at end to get the golden brown edges on the top. 

Serve and enjoy! It is a whole meal in one dish!
