Chrissy's Italian Gnocchi In Cream Sauce in under 30 Minutes!

If you do not know what a gnocchi is, This will be an amazing treat! A Gnocchi is an Italian style pasta made from potato and is similar to a dumpling. You can find them in the pasta isle at your local grocery store. They are very versatile and can be used in sauces, pesto's, soups, and gravy's. 

This particular recipe is for a cream or white sauce either soup style, or regular sauce style recipe. The only difference is the amount of chicken stock used.  


1 Stick of unsalted butter
1/2 Cup All-Purpose flour
3 Tablespoons Olive Oil
4 Stocks chopped Celery
2 Tablespoons minced garlic
1 Yellow onion chopped fine
1 1/2 cups shredded carrots
1 cup frozen (or fresh) spinach chopped
2 cups shredded or chopped cooked chicken (rotisserie style at the store works great)
3 cups half and half or heavy cream
1-2 (14 oz) cans of chicken stock (1 for sauce or 2 for soup)
1/2 teaspoon poultry seasoning
1 tablespoon thyme
salt and pepper to taste
2 pkgs of potato Gnocchi (in the pasta isle)


In a large stock pot add butter and olive oil. Over Low- Medium heat melt butter and add your (mirepoix) Onion, Celery and Carrots and saute over Medium to high heat until tender. Add your flour and stir quickly (this is a roux.) 

Next add your chicken stock and seasonings then bring to a boil. Turn down heat to low and slowly add your Half and Half and stir until it begins to tighten up and get a little thicker. Roughly 4-5 minutes.  Add chicken, spinach, and gnocchi. Cover with a lid and simmer 7-8 minutes stirring occasionally to make sure it doesn't stick to the bottom of the pan.
